Detox Day 1

 Day one of my 30 day detox is officially over. Of course, I was all hyped up and excited the first day to eat all of this delicious healthy food that is stock piled in my refrigerator. It was a great day, a day of excitement for the rewards to come from sticking with this lifestyle change! 

One thing I know that I need to do while on this detox is to have some quick easy meals already made up for those nights where I'm on the go or just plain tired to try my hand at something new or involved. That being said, I took advantage of my excitement for the day and made a big batch of Black Bean soup! 




This is by far one of my favorite soups of all time and I'm so excited to share it with you! It's delicious and filling. Plus, as a leftover it makes a great burrito filling or a nacho topping! One meal turned into two or three is always a fantastic thing in my world. One less thing to think about for me makes a big difference these days with little tykes running around. It's the small things in life people..it really is.




Black Bean Soup

*onion powder (to taste)
4 cloves of minced garlic
4  celery ribs (chopped)
1/2 red bell pepper chopped (or can use a pinch of sugar and a dash of cayenne)
 4-6 cups of organic chicken stock
5-6 cans of black beans (or 1 1/2 bags of dried beans, soaked and cooked)
2 tsp salt
2 tsp cumin
2 Tbs. Lemon juice

In a large pot add your chicken stock, chopped celery, bell pepper, garlic and onion. Simmer for 10 minutes or until celery and pepper are soft. Add salt, cumin and 3 cans of your black beans
rinsed and drained (or 1/3 of your cooked dried beans). Simmer for 5 minutes then puree. 
I use my blender wand thingy, as I'm sure that's the official name of the device.
Add the rest of your black beans and lemon juice. Heat through and then dig in! 
* Feel free to chop up a real onion. I am not a fan of them so I usually will substitute with the onion powder

This is great served hot off the stove or with tortilla chips and cheese!
You can also make this completely vegetarian by using vegetable broth in place of the chicken stock.


This was the perfect dish for our rainy day and for our detox! I hope you enjoy it as much as we do!

Gluten Free Tortillas


Starting tomorrow I am going to be doing a 30 day detox. I will be eliminating allergenic and addictive foods from my diet, bringing my ph levels back to neutral. From then on, I will gradually add my "avoid" foods back into my diet and see how my body responds. This process will flush out the toxins in my system and the end result will be more energy, clarity of mind, weight loss, and simply feeling great from the inside out! I have done this several times before and if you have never done a detox, I encourage you to join me! You will feel amazing afterwards! We even have a FB group set-up where you can receive meal plans, grocery lists, accountability and encouragement. You can't get much better than that! My plan is to blog my journey through these next 30 days!

In the meantime, I am still trying new recipes and adjusting our way of eating here in the Wakley household. This one, Gluten Free Tortilla's, was a BIG hit for the whole family. I have even had several people ask me for the recipe already!  So, without further ado...


After you make your dough, form it into a ball and flatten. I used a combination of garbanzo bean flour and brown rice flour.  Your dough should be soft not sticky.



Roll out into a circle. Try to get it pretty thin. If you have a handy metal scraper, this helps to lift the tortilla off the counter and into your frying pan. If you don't just use your spatula and loosen the edges first before lifting the tortilla. It may tear a bit put patch it up as best you can with your fingers.




Heat your ungreased skillet. (I love my cast iron skillet!). Cook on medium high heat, until you see the tortilla start to bubble. Flip and let the other side brown.




These tortillas turned out great! My husband and I were battling over the last one. We ate them using the Veggie Lentil Tostada Recipe  but we were content eating them plain too. Yes! They were that good!



I can't tell you how long they would last, because we ate the whole batch in one night! One batch made 8 medium sized tortillas. Next time I make these, after my detox of course! :) I think I will make several batches and even try freezing some to see how they hold up.




Gluten Free Tortilla's
Serving size approx 8 medium tortillas
1/2 cup white rice flour
1/2 cup brown rice flour
1 cup tapioca flour
1 tablespoon white sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons xanthan gum
2 tablespoons shortening
3/4 cup water

Mix together the rice flours, tapioca flour, white sugar, baking powder, salt, and xanthan gum. Mix in the shortening with your fingers until well combined. Add the water and mix well. If the mixture is still dry, add a little more water. Heat an ungreased skilled on medium-high heat. Roll out tortillas and cook each one on the hot pan until it begins to bubble. Then flip it and cook until the bottom has some brown spots. They're the best if you stack them on top of each other as they come out (this softens them up a bit). You can also throw a slightly damp towel over the top one. These keep pretty well in a plastic bag in the cupboard.

1/2 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons xanthan gum
2 tablespoons shortening
3/4 cup water

Mix together the bean flour and rice flours, tapioca flour, coconut sugar, baking powder, salt, and xanthan gum. Mix in the shortening with your fingers until well combined. Add the water and mix well. If the mixture is still dry, add a little more water. Heat an ungreased skilled on medium-high heat. Roll out tortillas and cook each one on the hot pan until it begins to bubble. Then flip it and cook until the bottom has some brown spots. Stacking them on top of each other as they come out  softens them up a bit and makes them extra yummy!. You can also throw a slightly damp towel over the top one. They can be kept in a plastic bag in the pantry.

Exercising the power of "NO"!

Just wanted to encourage you all today to keep saying "NO" to those things that tend to control us. The picture below is of two delicious treats that I bought for my hubby. He has been working really hard these last few days and I know that he would love a sweet surprise. Yet, I have made up my mind that I will not buy or eat one for myself. Although they look AMAZING, today I am choosing to exercise the power of "NO". 

I am finding it is getting easier each time I do it. Said "NO" to a DQ treat the other day too! It is these small victories that will help us achieve a much larger victory in our health and fitness journey.

 Thank you God for giving me strength in this moment and for many "sweet" moments to come.

Liz's Goals

Health and fitness goals during pregnancy

SHORT TERM GOALS:

1. Continue to cut out the sugary treats for a month. I just had my 5 month appointment. My plan is to stay on track this month with no sugar. EEKK! Going month to month is less intimidating than saying no sugar for the rest of pregnancy!!! AHHH! (This may sound crazy but it is an area where I really struggle.) When I am careful about my sugar intake, then my body tends to feel so much better and people want to be around me more...hee hee because I am obviously less irritable! 

2. So I have been walking a lot lately and I would like to make it a goal to get out and walk 5-6 times a week. Each time I go I would like to quicken my pace to really get my heart pumping. Each walk should be a minimal of 30 min. I really do miss the running days, but trust me you don't want to see this prego lady running! TRUST ME! :)

3. Only eat when my body tells me that it is hungry. These last few weeks my appetite has increased a ton, which tells me that the baby is growing. Yipee! I just want to be aware of when my body really needs fuel or if it is just mindless eating that is taking place. 

4. WATER, WATER and MORE WATER! Goal: Drink 3 water bottles a day. My water bottle can hold 24 oz of water. Water is a must during pregnancy. So many benefits!!

** These are my 4 short term goals for this month. My plan, when I have my 6 month appointment, is to evaluate how I did with these 4 goals and then modify them if necessary for the next month.

LONG TERM GOALS:

1. Gain only 30 lbs this pregnancy. First pregnancy I gained 50 lbs, second 35-40 lbs. and the third...??? We will see :) So far I have gained 10 lbs. I am currently 21 weeks along. I weighed 147 before pregnancy. I am trying to keep this weight thing under control so that it will be much easier to shed pounds post pregnancy. 

2. Be in shape when baby comes. (pregnant in shape) :)

3. Have sugar cravings under control. 

*Reminder: I can only achieve these goals through Christ's strength in me!

Guiltless Valentine's Chocolate!

Doesn't the title of this post just have your curiosity peaked? Guiltless chocolate....hmm that sounds questionable to me, but I'm not joking. I don't joke about chocolate, that just doesn't seem right. So when I say guiltless I mean it! Now, you can celebrate Valentine's Day in chocolate lovers heaven and not feel bad about it. Believe it because I'm about to knock your socks off with this Raw Chocolate Sauce Recipe.



Not only is it wonderful chocolatey, delicious goodness BUT, it is also super simple to make. And who doesn't like that!?  This recipe calls for 3 ingredients, dates, raw honey or pure maple syrup and raw cocoa powder.  I like to purchase my cocoa powder from Vitacost (on-line). I usually get my raw honey from the local farmers market and I just bought a big tub of dates from Costco.



I have found that most of the healthy recipes use dates for sweetness and thickeners in place of refined sugar and starches. They can be used for a multitude of things from salad dressing to desserts. Medjool dates seem to be the brand that is most used. I'm not sure if it's because they are bigger in size or have a sweeter flavor or thinner "skin" to them. I'm still experimenting with that information. The tub that I bought from Costco is branded as Hadley. They are smaller in size compared to the Medjool dates. However, last time I was at Costco I did see the Medjool dates there also. Most grocery stores carry them too. Whichever kind of date you decide to buy just make sure they are pitted. This will make your life a lot easier.




RAW CHOCOLATE SAUCE RECIPE

4 TBS raw cocoa powder
1/2-3/4  maple syrup
8 Hadley dates pitted

Blend all ingredients in a high powered mixer until smooth.

Yup, that's it. Oh, except for the part where you can eat to your hearts content! Dip in your favorite fruit (strawberries, oranges), use as a sauce over your favorite coconut milk "ice cream" (post to come soon), graham crackers...pretty much anything because what doesn't taste good dipped in chocolate?
